  • 1 cup (240ml) milk (or coconut milk for extra richness)
  • 1 egg
  • 2 tbsp melted butter (or coconut oil)
  • 1 tsp vanilla extract (optional)

Steps:

  1. Mix dry ingredients: Whisk flour, palm sugar, baking powder, and salt in a bowl.
  2. Combine wet ingredients: In another bowl, beat milk, egg, melted butter, and vanilla.
  3. Make batter: Pour wet ingredients into dry ingredients. Stir gently until just combined (small lumps are okay—don’t overmix!).
  4. Cook: Heat a non-stick pan over medium-low heat. Pour ¼ cup batter per pancake. Cook until bubbles form (1-2 mins), flip, and cook another 1 min.

Serving Ideas:

  • Drizzle with palm sugar syrup (simmer ½ cup palm sugar + ¼ cup water until thick).
